The Instant Pot strikes again!

If you caught, "Foodie Friday" here is the recipe for, "Instant Pot Crack Chicken"!

You'll need...

10 slices of cooked bacon

3 chicken breasts (2.5 to 3 pounds total)

1 8oz package cream cheese

1 package Ranch dressing mix

1 tablespoon minced garlic

1 teaspoon paprika

1 teaspoon onion powder

1 cup chicken broth

8 oz shredded cheddar cheese

Chopped green onions

Make it:

Cook bacon in a 400 degree oven, for about 15 minutes.  Or, use pre cooked bacon (like I did). After baking, set aside.

Add chicken and cream cheese to the Instant Pot (going forward, calling it "IP")

Sprinkle with Ranch Dressing Mix, add minced garlic, onion powder and paprika.

Pour in the chicken broth.

Close the lid and pressure cook on, High Pressure for 15 minutes!  When done, wait for the 10 minute natural release.  Then, release the rest of the pressure.

Remove the chicken from the IP and shred in a large bowl. Turn the IP to "saute" and whisk the cream cheese mixture until it's combined. 

Add the shredded cheddar, and stir to combine.  Turn off the IP, add the chicken and stir it up!  I cut up the bacon into bits, and stirred them in.  You can also hold some bacon out, and lay the slices on top of a sandwich.  Garnish with some green onions and you're set!!!
