Cold & Flu Season Means You Need This Chicken Soup Recipe

Like it or not, we're smack dab into the cold and flu season.   Sure, you'll do anything to avoid catching a bug.  But if you come down with something, you know what mom always said...get some rest and eat some chicken soup! 

If you have an Instant Pot (or similar pressure cooker), you can enjoy a hearty, homemade bowl in less than one hour!  If you have a cold, that means you'll feel better faster...right?  Science hasn't proven it, but if mom said it's true...we'll side with her!

Here's the recipe I use to make what feels like a, "hug for your belly on the inside" meal...

Instant Pot Chicken Noodle Soup (Total time : 50 minutes)

What ya need:

- 1 tablespoon of olive oil

- mince 3 cloves of garlic

- 1 onion, diced

- 3 carrots, diced

- 3 stalks of celery, diced

- 1/2 teaspoon thyme

- 1/2 teaspoon rosemary

- 1 1/2 pounds of boneless, skinless chicken breasts

- salt and pepper to taste

- 4 cups chicken broth - use the lower sodium so you can add salt later (one box is 4 cups)

- 4 cups water

- 2 bay leaves

- 8 oz spaghetti or egg noodles

- Juice of 1 lemon

- 2 tablespoons parsley

Let's make it!!!

1. Set your Instant Pot to the saute.  Add olive oil, garlic, onion, carrots and celery.  Cook about 3-4 minutes, until tender-ish, stirring occasionally.  Stir in thyme and rosemary and cook for 1-2 minutes.  

2. Season chicken with salt and pepper. Add chicken, the broth, bay leaves and 4 cups of water to the Instant Pot. Set the IP to, "Pressure Cook" and the timer for 15 minutes. When finished, quick-release the pressure according to the manufacturer's directions. Remove chicken from the pot, place in a bowl and shred with forks.

3. Select "high saute" and bring the broth/water to a boil.  Stir in pasta and cook, uncovered about 8-11 minutes...or until the noodles are tender.

4. Stir in chicken, lemon juice and parsley.  You can also add more salt/pepper to your taste.

5. FEEL BETTER!!!!
