Need a Thanksgiving Dish to Pass?

Ok.. Thanksgiving is days away and it's ALL about the food!  If you're looking for a tasty dish to pass, I've included 2 of my favorites... my Aunt Gina's broccoli casserole and raspberry bars!!  So delicious and so EASY!  Feel free to email me and share your favorite Thanksgiving dish to pass - 

2 large bags of frozen broccoli - or 3 or 4 large heads of broccoli 
1/4 c mayo 
1 stack Ritz Crackers 
1 egg
1 can cream of mushroom soup
1 oz cheddar cheese
1/2 stick of butter 

Cook and drain broccoli - I like to blanch and once cooked 3/4 of the way, I put the broccoli in an ice bath to stop the cooking and keep the color.  This helps make sure your broccoli isn't mushy! 
Mix soup, egg, mayo and cheese with broccoli 
Place in a greased casserole dish 
Melt butter, crush crackers, mix together and sprinkle over the top
Bake @ 350 degrees for 45 mins 
*I get a little generous with the crackers and cheese.. feel free to add more based on your liking

1 1/4 cups all-purpose flour
1 cup white sugar 
1 cup chopped pecans/ or crushed pretzels if you have nut allergy
1 cup softened butter 
1 egg

For filling: 
10 oz Raspberry preserves - note: you can use any preserves you like! 

Preheat oven to 250.  Combine all ingredients, except preserves, in a large mixing bowl. Beat at low speed, scraping bowl often, until mixture is crumbly.  Reserve 1 1/2 cups of crumb mix and set aside. Press remaining crumb mix onto bottom of greased 8 in square pan.  Spread preserves to within 1/2 in of edge.  Sprinkle the rest of crumb mix on top.  Bake for 40-45 min or until light brown.  Cool and serve!
