Quick and easy #MeatlessMeal for dinner tonight!

Delicious and super filling

Whether you're vegetarian, like me, trying to do #MeatlessMonday or just looking for a delicious and quick dinner idea... I found a great weeknight option for you!  

Got this from one of my favorite food bloggers, Monique of Ambitious Kitchen!  She shares a lot of great meat and veggies options that are super easy and delicious.  This one is the Roasted Butternut Squash Broccoli Cheddar Couscous.  Recipe/pics and instructions for you below.  If you make it, please share pics and thoughts with me!  Facebook/Instagram/Twitter @mollyonthemix or email: [email protected] :) Happy cooking! 


For the butternut squash - preheat oven to 400
4 cups cubed butternut squash (from about 2 pounds butternut squash)
1 tablespoon olive oil
½ tablespoon pure maple syrup
½ teaspoon chili powder
½ teaspoon garlic powder
¼ teaspoon cayenne pepper
Freshly ground salt and pepper

and bake for about 20 mins..  flipping/stirring up at about 15 mins to get all the edges nice and crispy

For the broccoli cheddar couscous:
1 3/4 cup water or low sodium veggie broth
1 cup couscous - I like pearl, but you can use israeli 
1 medium head broccoli, cut into small florets (about 3 ½ cups broccoli florets) - I used a bag of frozen florets, because I'm lazy
1 1/2 cups shredded cheddar cheese - or more to your liking!  I like it real cheesy! 
Freshly ground salt and pepper, to taste

I also added a bit of paprika, cayenne and salt/pepper too!  

To keep it truly vegetarian, I added 1 can of drained and rinsed chickpeas directly to couscous once it is done cooking.
