The BEST and EASIEST Christmas Cookies to Make

It's Bake Cookies Day!

It's another one of those made up, internet holidays... but this time I think we should celebrate!  It's the holidays and everyone is sharing their cookies, so now it's your turn because it's Bake Cookies Day!  And I've got a super easy, delicious cookie recipe for you!  

I'm notorious for being a terrible baker.  I always burn cookies or put in too much or too little of an ingredient that throws off the whole recipe.  I like to COOK where it's not so much of a science as baking.  BUT I gave it a try last night and these thumbprint cookies turned out AMAZING!  If I can do it, so can you!  Best part is, you probably already have most of these ingredients in the pantry and fridge.  

INGREDIENTS
1 3/4 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. kosher salt
1 1/2 sticks butter, make sure it's softened
1/2 c. granulated sugar
1 large egg
1 tsp. pure vanilla extract
Assorted jams, for filling cookies.. I used raspberry, because that's what I had at home :) 

DIRECTIONS
Preheat oven to 350º and line two baking sheets with parchment.

In a large bowl, whisk together flour, baking powder, and salt.
In another bowl, you're supposed to beat butter and sugar with a handheld mixer... but I don't have one, so I just used my food processor.  It took a bit longer, but it still worked and I didn't have to break a sweat trying to do it by hand!  Once the sugar and butter are well combined, add in the egg and vanilla. Then add dry ingredients in two batches until well incorporated.  Seriously, two batches.  All the flour can easily fly all over the place if you try to do it at once... trust me, I would know.  
Now, it's time to get these babies on the baking sheet.  Get about a spoonful of batter, roll into a ball and place on the baking sheet.  Then put your thumb right in the middle to make a little pool for the jam to go in!  Once all the cookies are on the sheet, fill that cookie pool with a teaspoon of jam in each cookie.  Bake until edges of cookies are golden, 13 to 14 minutes. Cool on baking sheets before serving... or burn the roof of your mouth and eat right away, like me :)
