Quinoa Cucumber Power Salad with lemon vinaigrette

A healthy side dish!

Quinoa Cucumber Power Salad with lemon vinaigrette

This is one of my favorite food prep meals!

And you can add shredded chicken or even add strawberries or craisins!

 

Ingredients

1 cup cooked quinoa (let it cool before mixing in the bowl)

( sometimes I add 2 cups spinach, finely chopped)

(sometimes I add about 3 tablespoons of minced basil)

1 container of cherry tomatos, diced

1/2 cup diced cucumbers

1/4 cup raisins (or craisins or sliced strawberries)

2 tablespoons lemon juice.

1 and 1/2 tablespoon extra-virgin olive oil.

Salt and pepper to taste.

Mix all these ingredients in a large bowl and serve - CHILLED.
