Sweet Potato

Who's excited for Thanksgiving? ME!

I posted this photo on social media last year for Thanksgiving and so many of you asked for the recipe! So here it is:

You'll need:

1 large can of sweet potatoes (yams)

3/4 stick of margarine or butter (melted)

1/4 cup sugar

1 tsp cinnamon

1 tsp nutmeg

2 eggs

1 cup cornflake crumbs

1/2 cup chopped pecans

1/2 cup brown sugar

3/4 stick of melted margarine or butter

Baking instructions:

Warm the potatoes and syrup. Then mash up or mix in a blender, food processor or mixer to a very smooth consistency.

Add other ingredients, mix well.

Place in a 3 quart casserole dish or 9x13" pan. Bake uncovered about 20-30 mins (until not runny in the middle) at 400 degrees. In a separate bowl make the topping mixture. After the casserole cooks, then spread the topping on top of the casserole and bake for another 10 minutes* (until brown on top).

Serve warm!

*Topping may boil over, place cookie sheet underneath
