Recipe - Cheese Souffle
Yield 6-8 souffles in ramekens

INGREDIENTS:
4 Egg Whites
2 Egg Yolks
1 Cup Milk(Microwave for 30 seconds)
1 Bay Leaf
1 Cup Parmesean Cheese(Shredded)
1/2 Cup Cheddar Cheese(Shredded)
1/4 Cup Flower
3   Tbsp Butter
Cayenne
Nutmeg
Lemon Juice
 

PREP YOUR RAMEKINS BY SPRAYING WITH COOKING SPRAY AND SPRINKLING SOME PARMESEAN CHEESE INTO THEM.

PERHEAT 375

1) Whip 4 egg whites to medium stiff peaks in Standing Mixer. Set Aside
2) Start making your Bechamel. Put butter and flour into a pan and cook until light brown.
3) Once brown, add in HEATED MILK and bay leaf. Whisk until smooth sauce consistency. Add Cheddar Cheese. Set aside off of heat to cool.
4) Once cooled, mix in 2 Egg yolks into the Bechamel
5) Fold in the 4 Egg Whites from earlier AND parmesean cheese
6) Pour mixture into ramekins until about 3/4 full.
7)Put into oven for ~25 minutes
