The Most Delicious Potato Pancakes in all the Land!

Hanukkah is the festival of lights. We celebrate the miracle of the oil lasting 8 days when it was only supposed to last one. SO to honor oil, we fry lots of food. And indulge in those fried foods. Potato Pancakes are one of those foods, otherwise known as LATKES. It's a super quick recipe, it just takes some care. Here we go! 

INGREDIENTS:
2 Potatoes (peeled)
1 onion
1 Egg
1/4 C Pretzel crumb(could you flour/matzo meal)
1 lemon (for juicing)
Garlic Cloves



1) Shred Potatoes, Onion and Garlic (Food processor works great, otherwise a cheese grater)
        Once shredded, drain all of the liquid out. These need to be as DRY AS THEY CAN BE. When you've drained them the best you can, lay them flat to dry even more.

2) Combine egg and pretzel crumb with onion and potato mix. Add salt and pepper. Mix until combined.


 

3) Shallow fry little pancakes in vegetable oil.About 3 minutes each side, or until it holds its shape and looks brown and delicious! 

I highly suggest you serve with sour cream and apple sauce(even though it isn't in the picture....
