French Onion Soup + Mac N Cheese = Deliciousness

You ain't never had Mac n Cheese quite like this!

Now that Fall is here, we're in full affect comfort food mode. The other night I made some Beef Stoganoff and boy was that delicious. But this...this right here, well change your world. 2 of the best things I can think of on a chilly fall day are FRENCH ONION SOUP and MAC N CHEESE, so I decided to combine them into this delicous dish! 

Alright, Here we go. - Ingredients listed at the end

STEP 1 - Slice and cook 2 onions on medium low until caramelized with a little bit of brown sugar. (At least an hour)

Step 2 -  Boil noodles (you know how to do this and don't need my help. So no picture.

TIME TO START THE SAUCE!

Step 1 - Make a roux with the 2 TBSP of Butter and 2 TBSP of flour. This means cook the flour and butter until you get a nutty, brownish gold paste. Season Roux with garlic and thyme, salt and pepper

Step 2 -  Add in the milk and beef broth, and bring to boil. Once boiling bring back to simmer, mixing throughout. Add in dijon mustard

Step 3 - Turn heat to low. Add in the cheese!! 

  

Step 4  - Mix in the onions! 

Step 5 - Add noodles and portion into ramikens (or whatever serving tool you want) Sprinkle with more Gruyere and bread crumbs and bake for 20 minutes at 425(or until ooey gooey and delicious!)

INGREDIENTS
8 oz Cavatappi noodles (half of a box. Cavatappi is my fave for this, but you can use whatever)
2 White Onions
A little Brown Sugar
1 1/2 Cup White Cheddar (Shredded)
1 Cup Gruyere (Shredded)
1/2 Cup Cheddar Cheese (Shredded)
1/2 Cup Asiago Cheese (Shredded)
2 TBSP Butter
2 TBSP Flour
1 Cup Milk
1/2 Cup Beef Broth
Thyme
Dijon Mustard
Garlic
Bread Crumbs
