Everything's More Fun When It's Mini!

A fun dessert for any party!

This weekend is my girlfriend Hannah and my first real attempt at catering. We made a bunch of food for Hannah's sister's wedding, and one of those snacks were MINI APPLE PIES! So fun, so easy,a nd good for any event.

So here's what you do, first bake the bottoms of the pies in a mini muffin tin for 5 minutes. Then make the apple filling. Fill those crusts, put another lid crust on and bake for another 15 minutes. Bada boom bada bing, you got mini pies. 

 

PIE CRUST:
1 CUP FLOUR
1 STICK COLD BUTTER
3TBSP VODKA
PINCH OF SUGAR

Put the flour and butter in a food processor and blitz it up. Add vodka/water/sugar and blitz until it lightly comes together. Let the crust rest for at least an hour in the fridge before rolling out.

Apple Pie Filling

10 apples peeled and cut
1/2 cup brown sugar

Cook low and slow until desired consistency.

Baking Steps

1) bake bottoms in mini muffin tin for 5 minutes at 375.
2) Fill with apple filling and pt a lid crust on.
3) Bake for 15 minutes at 375
